Oh yes! It is S'more season. Imagine crunchy biscuits, chocolate and marshmallow. Below is a recipe for chocolate Graham Crackers to make them extra chocolaty. I started with the recipe from The Kiwi Country Girl and added cocoa.


Ingredients

Graham Cracker

210g plain flour

140g wholemeal flour

1 tsp baking soda
1/2 teaspoon cinnamon
1/2 tsp salt
150g butter (softened)
100g brown sugar
90g honey
1-2 tbsp water

To make S'mores:

Method

 
In a bowl whisk together plain flour, wholemeal flour, baking soda, cocoa, cinnamon and salt and set aside.
Using a mixer (stand or hand mixer) cream the butter, brown sugar and honey until light and fluffy.
Add the flour and cocoa mix to the butter mix on low speed until the mix looks like coarse sand.
Add as much water as you need until the dough comes together.
Remove the dough and split in half. Flatten each piece into a round disc and wrap in plastic wrap or baking paper, popping in the fridge for 30 minutes.
Pre-heat oven to 180 degrees celcius.
Line two oven trays with baking paper and set aside.
Remove dough from fridge and on a lightly floured surface roll each disc out until it is approximately 5mm thick.
To cut the cracker shapes you can use a cutter, a knife or a pizza cutter as I did.
Place the crackers on your prepared trays, leaving a bit of a gap between the cookies.
Bake for 10-12 minutes. With the cocoa it is hard to see if they are lightly browned but they do deepen in colour.
Remove from the oven and cool on the tray for a few minutes before transferring to a cooling rack.
 
To make the S'mores, take a cracker and put a few squares of chocolate on it. Toast your marshmallow over a fire or barbecue (please be careful it is very, very hot, adults please take care of this for your kids and place the melted marshmallow onto the chocolate.
You can also do this in your oven or under a grill if you can't toast your marshmallows.
Place your crackers on an oven tray lined with baking paper, layer with your chocolate and marshmallow and pop under the grill, keeping an eye on them until they are just melted.
