You can use any combination of salad ingredients you like but this is what I used. Mixed baby leaf lettuce, creamy blue cheese, walnuts, dried cranberries and pear.
Recipe for chocolate dressing: I just drizzled the dressing on top of the salad, I didn't coat the salad in it and this made enough for two generous serves of salad, so just increase as required.
50ml olive oil
2 tsp raspberry balsamic vinegar
15g 72% Devonport Chocolates dark chocolate
Salt and pepper to taste
Put your olive oil in a small saucepan on a low heat. Add your chocolate broken up and stir until chocolate is melted into the olive oil.
Whisk in raspberry balsamic vinegar and salt and pepper.
I made my dressing the night before I took photos and kept it in an air tight jar. It didn't separate, but if it does give it a quick shake. I would recommend only making the dressing as you require it.
