Just in time for Mother's day we have delicious macaroon's made by our Office Manager Ali. These were absolutely divine and after I ate one I whipped the rest away to take a photo. They may, or may not have made it back to the staff lunch table!
This is a pretty easy recipe and perfect if making your Mum a treat is more your style.
4 egg whites
250g caster sugar
2 tsp finely ground cocoa powder
2 tbsp grated chocolate (of course we recommend one of ours like the 70% cocoa solids dark chocolate)
65g coconut thread.
Heat oven to 100 degrees Celcius. Just use a simple bake setting, not a fan bake.
Line an oven tray with baking paper.
Whisk egg whites to form a soft peak.
Gradually add caster sugar and cocoa powder until mix forms firm peaks and is glossy.
Fold through grated chocolate and coconut thread.
Spoon onto oven tray.
Bake for 1.5 hours. One of Alison's tips is to open the oven door just for a second halfway through.
If you like chewy ones take out of the oven to cool. If you like crunchy one leave in the oven to cool.
