Spiced Hot Chocolate and Marshmallow Cookies

You can't have winter without an extra special hot chocolate recipe. You can't have hot chocolate without cookies, so we thought, why not combine them all? Our Fairtrade Spiced Hot Chocolate adds an extra hint of warmth to these cookies, not too much, just the perfect amount. Now all you need is a cosy fire and a warm jumper.


300g plain flour
65g brown sugar
130g Devonport Chocolates Spiced Hot Chocolate Mix
1 teaspoon baking soda
75ml vegetable oil
1 teaspoon vanilla extract
60ml milk
2 eggs lightly beaten
100g Devonport Chocolates 55% Cocoa Solids Chocolate Drops

75g chopped pecans

1 packet of Devonport Chocolates Vanilla Marshmallows cut into quarters


Preheat oven to 190°C. Line three baking trays with baking paper.
Combine flour, brown sugar, Spiced Hot Chocolate Mix and baking soda in a large bowl. I find it really useful to use a whisk to combine dry items.
Make a well in the centre.
Add oil, vanilla egg and milk and stir until mixed.
Add chocolate drops and pecans and fold in until just combined.
Roll level tablespoons of mixture into balls and place on trays 4 cm apart.
Bake each tray for 6 minutes.
Take out of oven and place a piece of marshmallow on top of each cookie.
Cook for approximately 3 minutes more, aiming to lightly brown and melt the marshmallow.
