Warm up your winter nights with this delicious cookie recipe using our Fairtrade Spiced Hot Chocolate Mix.
For me, this made a fantastic 26 cookies.
Ingredients:
- 300g standard flour
- 150g Devonport Chocolates Spiced Hot Chocolate Mix
- 2 tsp cream of tartar
- 1 tsp baking soda
- 225g butter, room temperature
- 200g sugar
- 2 large eggs
- 170g Devonport Chocolates 55% Cocoa Solids Drops
Preheat oven to 200 degrees Celsius.
Prepare 2-3 oven trays with baking paper (I needed three).
In a medium bowl sift together flour, Spiced Hot Chocolate mix, cream of tartar and baking soda.
In a large bowl (using an electric mixer), beat butter and sugar on medium speed until light and fluffy.
Add eggs one at a time and beat to combine.
With mixer on low, gradually add flour mixture and beat until combined.
Fold in chocolate drops.
Using heaped tablespoons, form balls of dough and place about 7-8cm apart on baking trays (mine spread quite a lot).
Bake cookies for 10 minutes until centre is set and they crack a little.
I cooked mine, one baking tray at a time, while I was rolling balls for the next tray as my oven is quite temperamental.
Let cookies cool on oven tray for five minutes and then transfer to cooling racks.
